Ripe platanos will always give you a sweet taste. These I personally love with any dish, at any time of the day. I grew up eating them with black beans and rice or as a dessert, but typically always fried. In this recipe I made them baked with less oil and they came out delicious. It's incredible that I used the least seasoning, yet they have a rich flavor on their own. These bites are semi-crunchy as they are baked and extremely ripe, but capture a medium texture of soft and crunchy.
Baked Plantain Bites (Platano Maduro Bocadillos) Recipe

Ingredients:
1 Ripe Plantain
salt
olive oil
Directions:
Dice your plantains
Brush with olive oil and drizzle salt
Heat up in the oven at 350 degrees for 15-25 minutes or until soft crispy
