Usually, by the end of the week, I have close to zero energy to cook, I rely on leftovers or something easy to make. Since, going gluten-free I miss one of my favorite salads the Chinese chicken salad from California chicken cafe. This is not an exact dupe, so I would not refer it to as that, but it's something near that line. I used an olive oil dressing that was smooth for me, but if you can tolerate red wine vinegar or anything vinegar, this would go perfectly with it.
